Summer salad with broad bean and tuna

 

We present today full taste and very healthy salad with broad beans a rich source of folic acid, tuna and french dressing.

Ingredients:

  • 2 handfuls mix of salad
  • 1/2 can of tuna in oil
  • 1/2 red onion
  • 10 cherry tomatoes
  • 1/2 glass cooked and shelled broad beans
  • Few cashew nuts
  • Croutons from whole-wheat bread
  • Pepper and salt

Dressing:

  • 1 tbs balsamic vinegar
  • 2 tbs olive oil
  • 1 tsp honey
  • 1 tsp mustard
  • 1 garlic clove
  • Juice from 1/2 of lemon or 1/2 tsp of citric acid

First step is preparing the dressing. To small bowl pour the vinegar, olive oil, honey and mustard – stir pricesly then add pressed garlic and lemon juice. Season to taste with pepper and salt (as desired).

Roast the cashew nuts on the frying pan until they become slightly brown. Boil the broad beans and peel it. Cut in half cherry tomatoes and slice the onion. Drain tuna from the oil.

Place mix of salad on a plate, then onions, tomatoes, tuna, broad beans and nuts. Pour with the previously prepared french dressing.

Serve with croutons from whole-wheat bread.
