Vegetarian lentil pate

 

Pate from lentil is rich source of protein and fiber. Thanks to its delicate taste you can eat it with your favourites veggies!

Ingredients:

  • 1,5 cup green lentils
  • 2 big carrots
  • 2 large parsley root
  • 2 large onions
  • 1/2 celery root
  • 4 cloves of garlic
  • 1 egg
  • 1 tbs butter
  • Olive oil
  • Allspice
  • Bay leaf
  • 2 tbs chooped parsley
  • Salt and pepper

Wash the lentils, then pour into a pot with salted water and cook until it becomes soft. In other pot cook veggies. Season with salt, allspice and bay leaf. After cooling the vegetables, cut them into small cubes and mix in a large bowl with lentils.

Chooped onion and garlic put on heated pan and fry on olive oil utill it’s sauté then pour it to the bowl with veggies and lentils. Stir the egg and add a large spoon of butter. Blend everything until smooth, until you get the desired consistence. At the end, sprinkle with chopped fresh parsley.

Pour everything to a baking pan then placed it in the oven preheated to 200°C. Bake pate about 50 minutes until it is browned at the top and then put it to the fridge, then cut into slices about 1.5 cm thick and it’s ready!
