Sun-dried tomato hummus

 

 Chickpeas and sesame paste is a vegetarian dish, an alternative to pate, rich in protein and iron.

Ingredients:

  • 200 g dry chickpeas
  • 100 g tahini (100 g of sesame blended with 3 tbs sesame oil)
  • 10 dried tomatoes
  • 3 garlic cloves
  • Juice from ½ lemon
  • Olive oil
  • 1 tbsp baking soda
  • Salt and pepper

Pour water with baking soda over the chickpeas and leave for the night. The next day change the water for the fresh one and boil chickpeas until they are softened.

Peel the boiled and cooled chickpeas, place in a bowl, add sesame paste, pressed garlic cloves, lemon juice and chopped dried tomatoes, season to taste. Blend everything to a smooth mass. If the paste is too dry, add a little water.

Serve with the whole wheat bread or crispbread.
