Raspberry Marshmallow

 

This dessert requires a litlle bit of patience - if you want it to be perfect you need to devote him some time. It’s really healthy and low in calories. People on a vegetarian diet can prepare it as well.

Ingredients:

Raspberry layer

  • 100 ml of milk 1,5%
  • 350 g raspberries
  • 2 tbs xylitol or honey
  • 2 tbs gelatin

Chia layer

  • 400 ml coconut milk
  • 3 tbs chia seeds
  • 2 tbs xylitol or honey
  • 2 tbs gelatin

Blend rasberries with milk and xylitol and put it in small pot. Cook on low heat adding slowly gelatin. Cook for about 5 minutes until it is completely dissolved. Divide the mixture in two. Pour the first part in small baking pan lined with paper. Then put into the fridge for about half hour to chill.

The next step – preparing chia layer. Add chia seeds and xylitol to cocount milk. Cook for a while. Then add gelatin and cook for 5 minutes until it is completely dissolved.

Next pour the white mixture on the concentrated rasberries. Then put to the fridge for 30 minutes. Next step - pour the second part of raspberries on top. Put everything to the fridge to chill until set.

After few hours we get a healthy, impressive, three-layered, dessert.
