Mushroom and herb omelette

Mushroom and herb omelette is traditional dish of french cuisine. We recommend it today as a quick, light and healthy dinner.

Ingredients:

  • 2 large eggs
  • 50 g mushrooms
  • 3 tbs clarified butter
  • 1 tsp bran
  • 1 tsp chopped chervil
  • 1 tsp chopped chive
  • 1 garlic clove
  • Salt and pepper

Put the eggs into a bowl, add herbs, salt and pepper. Whisk gently and set aside for a few minutes.

On preheated pan pure two tablespoons of clarified butter and add a garlic clove. Add washed and sliced mushrooms, fry them until drained and then reduce the heat. After the water will completely evaporated, put it on a plate and wipe the pan.

Spread a tablespoon of clarified butter over the entire surface of the pan. Pour in the beaten egg and fry gently over low heat. When it’s ready, place in the middle mushrooms and fold the sides using a wooden paddle.

Worth to know! You can serve the omelette with the sprouts or your favourite veggies.
