Millet pudding with berries and granola

This dish is perfect for a Sunday morning - light, tasty and very healthy! In combination with blueberries and granola, it tastes great but also is a valuable source of vitamins and minerals.

Ingredients:

  • 2 glass of cow milk or plant milk (for vegan)
  • 4 tbs millet ground in a grinder
  • 3 tbs honey or maple syrup (for vegan)
  • 1/2 glass blueberries
  • 2 tsp granola
  • 2 tsp coconut oil
  • 1 tsp coconut shreds

Pour milk, millet, honey and coconut oil into a small pot. Boil the pudding slowly over low heat, stirring constantly to prevent burning. When the pudding begins to thicken, make sure that the millet is soft enough and set aside. Blend blueberries until solid.

Serve the pudding in a large glass, placing a layer of granola, pudding and berries alternately. Sprinkle with coconut shreds.
