Lemon trout roasted in salt

The fusion of fish and lemon may seem quite cliché, but our lemon trout roasted in salt will certainly conquer your palate. It will literally melts in your mouth!

Ingredients:

  • 1 fresh trout
  • 1/2 lemon
  • 0,5 kg salt
  • 20 g butter
  • 2 egg whites
  • 1 garlic clove
  • 1 sprig of fresh thyme
  • Few sprigs of fresh dill
  • 2 tbs olive oil
  • Lemon pepper

Wash the trout thoroughly, cut out its gills and eyes, then dry it. Put half of the sliced lemon into a small bowl, pour olive oil, add finely chopped dill and thyme, lemon pepper and chopped garlic clove. Stir thoroughly and fill the fish with the ready mixture.

Whisk the egg whites gently, then add salt and a little water. Mix everything until the consistency is thick.

Place 1/3 of the salt on a large baking tray lined with baking paper, place the prepared trout on top of it and cover it thoroughly (except for the head and tail) with the rest of the salt.

Put the whole thing into the oven preheated to 190°C and bake for about 40-45 minutes.
