Egg muffins with veggies and feta cheese

If you are bored by the traditional scrabled eggs try out these healthy and fancy muffins!

Ingredients for 4 pieces:

  • 2 eggs
  • 1/4 red pepper
  • 1/4 yellow pepper
  • 2 tbs feta cheese
  • 1 tbs chopped onion
  • 1 tbs chopped chive
  • Small handful of radish sprouts
  • 1 tsp sunflower seeds
  • Salt and pepper

In a small bowl, carefully beat the eggs with finely chopped vegetables and feta. Season with salt and pepper to taste. Pour the mixture into muffin forms, then place them in an oven preheated to 180°C and bake for about 15 minutes.

Place the ready muffins on a plate, sprinkle with sprouts and sunflower seeds.
