Carrot cookies with orange hints

 

Carrot cookies with orange peel are a snack that we can take to work with us. They will be perfect as an addition to coffee during a well-deserved break! Cinnamon perfectly emphasizes the orange aroma, and cookies prepared on oat and millet flakes are a healthy and low-calorie snack.

Ingredients for 12 medium sized cookies:

  • 1/2 glass rolled oats
  • 1/2 glass millet oats
  • 150 g carrot (2 medium sized)
  • 1 egg
  • 2 tbs orange peel
  • 50 ml orange juice
  • 2 tbs chopped hazelnuts
  • 1 tbs coconut oil
  • 2 tbs honey
  • Cinnamon

Set the oven to 180°C. Pour oat flakes and millet flakes, nuts and grated carrot into a small bowl. Then pour the dissolved coconut oil and honey. Add egg and orange peel. Mix thoroughly and add the orange juice. Knead the dough until the ingredients combine. Season with cinnamon.

Place small portions of dough on a baking tray lined with baking paper with a spoon and flatten gently. Place them in the oven for 20 minutes and bake until golden brown.
