Amaranth Coconut Balls

A very quick and simple dessert. One of its greatest advantages, beside the taste, is that doesn’t contain sugar, flour and fat. A truly diet dessert, you can take it to work or serve with coffee at a meet-up with friends.

Ingredients for 10 medium-sized cakes:

  • 1 cup expanded amaranth (popping)
  • 100 g grated coconut
  • 50 g ground hazelnuts
  • 3 ripe bananas

Smash the bananas with a fork and blend until smooth. Add coconut, amaranth and hazelnuts. Knead until all ingredients are well combined.

Roll into bite sized balls, flatten them slightly before putting on a baking tray covered with baking paper.

Put the baking tray with the balls into an oven preheated to 170°C for 20 minutes. After half the baking time change the oven programme into thermaflow to prevent scorched cookies.
