A pike perch in pumpkin crust

 

Fish and chips? Pike perch in pumpkin crust is a great alternative to this English dish! The fish can be served with roasted potatoes and garlic sauce based on Greek yoghurt.

Ingredients:

  • 2 pike perch fillets
  • 1 egg
  • 100 ml milk
  • 100 g coarse ground flour
  • 100 g pumpkin seeds
  • 2 cloves of garlic
  • 2 tbs clarified butter
  • Brown rice or potatoes
  • Salt and pepper

Rub the pike perch fillets with pepper, salt and pressed garlic, then leave for a few minutes. Beat the egg together with milk. First cover the fillets with flour, then coat them in milk and egg and finally in the crumbled pumpkin seeds. Try to do this carefully in order to obtain a crispy coating.

In a hot pan, dissolve the clarified butter and fry the fillets for about 4 minutes on each side until the pumpkin crust turns golden.

You can serve the fish either with boiled brown rice or with baked potato boats.
